Your favorite Raduno Infused Organic Extra Virgin Olive Oil
1. Heat a medium skillet over low heat and add 1 tbps. regular olive oil. Add tomatoes, jalapeno, and half of onion and garlic and cook until thickened slightly. Salt and pepper to taste.
2. Once the salsa is cooked, remove from heat and set aside. Heat a small saucepan over medium heat and add 1 tbsp. olive oil and remaining half of onion and garlic. Cook until fragrant, then add beans and mash. Add salt to taste and cook for 5 minutes, stirring occasionally.
3. While the beans cook, fry 4 eggs sunny-side up and season with salt and pepper.
4. Place 2 warm tortillas on each plate. Divide the beans among them and then top with a fried egg. Drizzle with Raduno infused organic EVOO and top with half of your salsa.
